The Thaëron oyster is fattenened and matured in the River Belon where it takes on its famous nutty flavour from being immersed in the brackish waters. Our transportation of live shellfish is currently in vivier tanks and we are forging ahead with new technology to develop a more efficient method. we have the infrastructure to supply shellfish direct from our boats to southern Spain and Portugal on a weekly basis. When I was a young deck hand aboard a fishing vessel in the late '80s I always dreamed of developing what seemed to be an inefficient transport system!
